Fini Premium Gelato has been making artisanal ice cream in Porto de Mós, in the district of Leiria, since 2011. The recipes start from the Italian gelato tradition: less air worked in than in industrial ice cream, more solids, less fat and the sugar kept as low as possible — hence the denser texture and the more intense flavor. In go milk of the day, mineral water and fresh fruit, with no colorings or preservatives. There are twelve fixed flavors — among them vanilla, dulce de leche, hazelnut, coffee stracciatella, white chocolate with passion fruit and salted caramel — joined by limited editions that change with the season and with the ingredients available. The sorbets, made of fruit, water and cane sugar, contain no dairy. The brand works in four formats: Fini Cups, individual 125 ml portions in a glass jar; Fini Family, at 465 ml; fruit ice pops; and the Fruthentic line, frozen fruit pulp in bar form. The glass jars are designed to last after the ice cream is gone — they are dishwasher and microwave safe, and the brand calls that reuse finiciclagem. The ice creams reach more than a hundred points of sale across the country, and the online store delivers to mainland Portugal, the Açores (Azores), Madeira and Spain.
