Dr. Bayard candies have been made since 1949 in Amadora, from sugar, glucose, marshmallow root, honey and a syrup of medicinal plants — the proportion of the plants being the part of the recipe the family has never revealed. They leave the factory in two varieties, cough and menthol, wrapped one by one and sold in 100 g and 200 g bags, in boxes of nine and in larger packs for cafes and grocery stores. The recipe reached Portugal with a French doctor who had taken refuge from the Second World War, and who left it to Álvaro Justino Matias, the grocer who had taken him in. The paper listed the ingredients but not the quantities, and they had to be worked out at home, with the family's help, before there were any candies to sell. Mechanization arrived in the 1960s and, in 1969, production moved to the factory on Rua Gomes Freire, where it remains. The company has never left the same family: Daniel and André Matias, the founder's grandsons, succeeded their father, José António Matias. There are around fourteen people and a daily output counted in the hundreds of thousands of units, with the formula and the packaging artwork all but unchanged since the beginning. A small merchandising line has since grown up around the candies, drawing on that same imagery — caps, sweatshirts, socks, mugs and cloth bags — along with an illustrated book, "Um Milhão de Rebuçados" (A Million Candies), published for the brand's 70th anniversary.
